SR of 2,500-8,000. Picked a green one. Much hotter than the poblano. The heat hits pretty quick. I was surprised, and then a little worried that the heat would build to be more than I could handle. But that was the peak. It faded pretty quickly after that. Taste is like the poblano…not particularly good, like a veg. Steady heat in the back of throat and tongue…sides of tongue too. Occasional acute hits, but this dies away after a couple of minutes. Lingering heat is just a warm tongue.

There isn’t a lot to say about this salsa. It will remind you that sometimes the best things are also the simplest. Chiles, garlic, lime and oil. Apply heat and then a blender. They are transformed into one of the best salsas I have ever eaten. The garlic allows this to emulsify into a surprisingly creamy sauce. Dribbled on tacos or scooped up with chips, (or even spread on a grilled cheese sandwich) –you won’t have any trouble eating it. Period.
I never thought to put a salsa on my grilled cheese (last night I made grilled cheese & tomato soup, topped with popcorn, as I am 5 years old)!!!! This is a must-do for the future. Psyched.
